Easy and delicious avocado/cucumber salad
Hello everyone!! and welcome to another “Foodie Friday”!! 🙂
I found this recipe on Pinterest a while back as well as seen those ” Tasty” videos on Facebook and I have been meaning to try it since then because I consider myself an “avocado lover”, yes I love anything with avocado in it ( and salsa as well.. ha ha)
Anyways, this is a super quick and easy recipe and if you like this green, tasty fruit like I do you will LOVE IT!
I had enough salad for a couple days but I I did have to control myself a little bit to make it last ( mind you that my husband doesn’t like avocado, otherwise this would had been enough for one meal only..)
If I wasn’t eating Paleo at the moment, maybe I would had added some mozzarella cheese to it, I am sure it is delicious that way! and you can always replace the cilantro with parsley ( I know not everyone likes cilantro, I love it but I know that is not the case for everyone).
I think this salad is great to have at BBQs or with just about anything in my opinion ( chicken, fish, red meat), it is a great side for any meal, specially now in summer ( If you are in the northern hemisphere), it is easy to do and yummy, what else can you ask for?

Now get the ingredients ready, prepare this salad in a few minutes and ENJOY!
* 2 avocados
* 1 red onion ( But I will use half next time around, it was too big, maybe for a bigger salad with more avocado and tomatoes would be fine but one whole onion it was a bit much in this case..)
* 1 or 2 cucumbers
* Sweet tomatoes ( You can use other kinds as well)
* Cilantro ( If you don’t like cilantro you can use parsley I believe
* 1 lemon
*Salt and pepper
